For the Catfish:
⅔ cup yellow cornmeal
¼ cup all-purpose flour
1½ tsp seasoned salt
½ tsp black pepper
½ tsp cayenne pepper
½ tsp lemon juice
¼ tsp smoked paprika
2 large eggs
2 tsp hot sauce
500g catfish fillets
Oil for frying

Step-by-Step Instructions
Step 1: Prepare the Coating
In a large brown bag or ziplock bag, combine the cornmeal, flour, seasoned salt, black pepper, cayenne pepper, lemon juice, and smoked paprika. Shake well to mix.
Step 2: Prepare the Egg Wash
In a deep pie dish or shallow bowl, whisk together the eggs and hot sauce until well combined.
Step 3: Coat the Catfish
Dip each catfish fillet into the egg wash, ensuring both sides are coated.
Transfer the fillet to the cornmeal mixture in the bag and shake vigorously to coat thoroughly.
Place the coated fillets on a baking sheet sprayed with cooking spray.
