Pecan Pie Balls

  • Corn syrup – 1/4 cup (or substitute with honey or maple syrup)
  • Butter – 1/4 cup, melted
  • Vanilla extract – 1 tsp
  • Cinnamon – 1/2 tsp
  • Graham cracker crumbs – 1 cup
  • Powdered sugar – 1/4 cup, for coating

Instructions

1. Preheat and Prepare

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking and ensure even baking.

2. Make the Pecan Mixture

  1. In a medium-sized bowl, combine the chopped pecans, brown sugar, corn syrup, melted butter, vanilla extract, and cinnamon. Mix well until the pecans are evenly coated.
  2. Add the graham cracker crumbs and stir until fully incorporated.

3. Shape the Bites

  1. Spoon small portions of the mixture onto the prepared baking sheet, shaping them into bite-sized clusters or mounds.
  2. Space them about 1 inch apart to allow for even baking.

4. Bake

  1. Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the edges are golden brown and the mixture is bubbly.
  2. Keep a close eye on them to prevent burning.

5. Cool and Coat

  1. Remove the baking sheet from the oven and let the pecan bites cool completely for about 10 minutes. This helps them firm up.
  2. Once cooled, roll the pecan bites in powdered sugar to give them a sweet finish.

6. Store and Serve

  1. Store the bites in an airtight container to keep them fresh for several days.
  2. Serve as a snack, dessert, or a thoughtful homemade gift.
