Mini Pineapple Upside-Down Cakes

1. Preheat and Prepare

  • Preheat your oven to 350°F (175°C).
  • Grease muffin tins with non-stick cooking spray. Open the pineapple cans and set aside the juice for the batter.

2. Make the Topping

  • In a small bowl, mix the melted butter and brown sugar until well combined.
  • Spoon a small amount of the mixture into the bottom of each muffin cup, distributing evenly.

3. Prepare the Cake Batter

  • Follow the package directions for the cake mix, but replace the water with the reserved pineapple juice for extra flavor.

4. Assemble the Mini Cakes

  • Place a well-drained pineapple slice at the bottom of each muffin cup.
  • Add a cherry half, cut side up, in the center of each pineapple slice.
  • Pour the prepared cake batter over the pineapple and cherry, filling each muffin cup about 1/4 to 1/3 full.
