- Cauliflower – 1 medium head, cut into small florets
- Salt – 1 tsp
- Olive oil – 2 tbsp
- Eggs – 2 large
- Cream – 30 ml (approx. 2 tbsp)
- Black pepper – to taste
- Grated Parmesan cheese – 50 g (or more, as desired)
- Mozzarella cheese – 100 g, torn into small pieces
- Paprika – to taste
Instructions
1. Prepare the Cauliflower
- Preheat the oven to 200°C (392°F).
- Bring a pot of water to a boil. Add 1 tsp salt and the cauliflower florets. Cook for 5 minutes.
- Drain the cauliflower thoroughly and pat dry with a kitchen towel to remove excess moisture.
2. Roast the Cauliflower
- Spread the cauliflower florets on a baking sheet. Drizzle with olive oil and toss to coat evenly.
- Bake in the preheated oven for 10 minutes or until slightly golden.
3. Prepare the Egg Mixture
- In a bowl, whisk together the eggs, cream, black pepper, and a portion of the grated Parmesan cheese.
4. Assemble the Dish
- Transfer the roasted cauliflower to a greased baking dish.
- Pour the egg mixture evenly over the cauliflower.
- Sprinkle the remaining Parmesan cheese and distribute the mozzarella pieces on top.
- Dust with paprika for added flavor and color.
5. Bake
- Place the dish in the oven and bake for 20 minutes, or until the cheese is melted and golden brown.
