Baked Cauliflower with Cheese

  • Cauliflower – 1 medium head, cut into small florets
  • Salt – 1 tsp
  • Olive oil – 2 tbsp
  • Eggs – 2 large
  • Cream – 30 ml (approx. 2 tbsp)
  • Black pepper – to taste
  • Grated Parmesan cheese – 50 g (or more, as desired)
  • Mozzarella cheese – 100 g, torn into small pieces
  • Paprika – to taste

Instructions

1. Prepare the Cauliflower

  1. Preheat the oven to 200°C (392°F).
  2. Bring a pot of water to a boil. Add 1 tsp salt and the cauliflower florets. Cook for 5 minutes.
  3. Drain the cauliflower thoroughly and pat dry with a kitchen towel to remove excess moisture.

2. Roast the Cauliflower

  1. Spread the cauliflower florets on a baking sheet. Drizzle with olive oil and toss to coat evenly.
  2. Bake in the preheated oven for 10 minutes or until slightly golden.

3. Prepare the Egg Mixture

  1. In a bowl, whisk together the eggs, cream, black pepper, and a portion of the grated Parmesan cheese.

4. Assemble the Dish

  1. Transfer the roasted cauliflower to a greased baking dish.
  2. Pour the egg mixture evenly over the cauliflower.
  3. Sprinkle the remaining Parmesan cheese and distribute the mozzarella pieces on top.
  4. Dust with paprika for added flavor and color.

5. Bake

  1. Place the dish in the oven and bake for 20 minutes, or until the cheese is melted and golden brown.

6. Serve
