Generously grease and flour a tube pan or two loaf pans to prevent sticking.
Step 2: Make the Cake Batter
In a large mixing bowl, combine the cooking oil, sugar, and eggs. Beat until the mixture is smooth and creamy.
In a separate medium bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet mixture, mixing until well combined.
Stir in the vanilla extract, followed by the chopped apples and pecans. Mix until evenly distributed.
Step 3: Bake the Cake
Pour the batter into the prepared pan(s).
Bake in the preheated oven for 50-60 minutes. Start checking for doneness at the 50-minute mark by inserting a toothpick into the center—if it comes out clean, the cake is done.
Remove from the oven and let the cake cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.
