Step 3: Add Seasonings and Ingredients
- Add the taco seasoning mix to the cooked beef and stir to combine. Sauté for another 2-3 minutes.
- Stir in the enchilada sauce, refried beans, corn, and green chilis. Mix well until everything is evenly combined.
- Let the mixture simmer for about 5 minutes to allow the flavors to meld.
Step 4: Assemble the Casserole
- Grease a 9×13-inch baking dish lightly with cooking spray or oil.
- Place a layer of 4 halved flour tortillas on the bottom of the dish, covering it as evenly as possible.
- Spread half of the meat mixture over the tortillas.
- Sprinkle 1 cup of shredded cheese over the meat mixture.
- Repeat the layers: add another layer of 4 halved tortillas, the remaining meat mixture, and the remaining 1 cup of cheese.
Step 5: Bake
- Bake the casserole in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
Step 6: Garnish and Serve
- Remove the casserole from the oven and let it cool for a few minutes.
- Garnish with chopped green onions if desired.
